Fusion of Chinese and Peruvian cuisine.
"Lomo saltado" or Loin sauteed, is one of the best known dishes of Peruvian cuisine, in which its main ingredients are beef, rice and potatoes.
This dish comes from fusion of Peruvian and Chinese-Cantonese cuisine. Originally was named as lomito de vaca or lomito saltado.

Peruvian Lomo saltado recipe
Ingredients
The amounts described in this post correspond to one portion (1 person).
- 180 grs of fillet steak
- 1/2 Yellow aji pepper
- 1/2 red onion
- 1 tomato
- Coriander
- 10 grs of ginger
- 20 ml of soy sauce
- 15 ml of white wine vinager
- 40 ml of beef broth
- 10 grs of potato starch or flour
- Salt & pepper
- 1 Potato (for french fries)

How to prepare Peruvian Lomo Saltado
Clean the beef and cut into strips, salt pepper, set aside.
The yellow aji pepper cut into julienne without seeds or veins. Cut the onion into thick julienne, peel the tomato, remove the seeds and cut into small segments.
Heat a pan or wok. Once it is very hot seal beef, add the yellow aji pepper, onion and saute. Deglaze with vinegar.
Add ginger and veal broth, bind with dissolved flour, tomatoes and soy sauce.
Add and sauté the vegetables and finally add salt if necessary. Put the coriander leaves, accompany with fries and boiled rice.
